D'Bocas Restaurant Website : Refer : Review It
The Bocas is the name of a well known fishing area off the north east coast of Trinidad where a large amount of King fish (the most popular fish eaten here) are caught. When we first started out (over 15 years ago), we concentrated on seafood, primerally fish, hence our chosen name for the restaurant, D'Bocas. Our location and cusine has also changed over the years. The first D'Bocas restaurant was in St James and was basically conceptualised as a type of fast food "fish & chips" shop designed to give people a fish alternative to all the Foreign franchised chicken and chips restaurants that were flooding the country at that time. From St. James we moved into two of the most popular shopping malls downtown in an attempt to improve our market share. As this improved we decided that catering would be a natural step to increasing our business but since this was vertually restricted in the malls, we again moved the business to 105 Queen Street where we added a full bar and developed our catering skills. Realising that this Queen steet location was also restrictive in terms of size and location, we moved to 15 Chacon Street, a much bigger location to better serve and satisfy our customers.

One weekend back in the '70's, Chef David Smith and Tony Roma decided to throw some baby backs on the grill. It was going to be a temporary thing, using Tony Roma's own secret barbeque recipe. On Monday, they would go back to grilling their great burgers and steaks, and it would be business as usual at that little place called Tony Roma's restaurant in North Miami, Florida. One taste, and customers immediately convinced them to change their plans. Today, there are over 225 locations on five continents. And yes, both our beloved Tony Roma and Chef David are retired, but they keep a close watch on the international sensation they created: Tony Roma's, Famous for Ribs restaurants.
